  13. fresh coriander- garnish.
  14. sweet chilli sauce- just a drizzle to finish.
  15. radish - garnish(optional).
  16. sesame oil to cook.

Pick out eight of the smallest inner lettuce leaves, and arrange two each on four plates. When your timer beeps, drain the oil and lime juice off the scallops and mango and ginger. Spoon mango-cilantro salsa on top and sprinkle with cilantro. They're light and healthy and make for the perfect lunch or dinner. Butter lettuce for serving or lettuce of choice.

Lettuce Cups (mango & pork) instructions :

  1. If you have the time marinate the pork overnight in the ginger, garlic, lemongrass, soy and chilli befor you cook.
  2. In a wok or pan on a high heat add sesame oil and then the onions and cook for just a min or 2, then add the pork along with the marinade..
  3. Cook the pork on all sides until brown and turn the heat down a bit. cook for a few minutes..
  4. When the pork is cooking prepare all the garnish and mango for the lettuce cups..
  5. Arrange your cups on a platter and fill the mango that has been mixed with a little grate of garlic and dried chilli flakes (just a bit) and 1/2 the lime..
  6. Make sure your coriander, peanuts, lime zest, and radish is chopped and ready to go..
  7. Once the pork is reday add a squeeze of lime and drizzle of honey, give it a good stir and and top the mango with it..
  8. Next sprinkle each lettuce cup with the zest, nuts, coriander and radish each garnish adds colour, texture and flavour to the cups..
  9. Addin extra chilli sauce is optional and not essential maybe just drizzle a bit around the cups so people can dip if they want to..
