Ingredients of Vegetarian Pad Thai :

  1. 200 gms Pad Thai noodles.
  2. 1 tbsp oil.
  3. 2 tsp garlic, chopped.
  4. 1 tsp red chilli, chopped.
  5. 1 onion, sliced.
  6. 1/4 cup red and yellow bell pepper, sliced.
  7. 1/4 cup roasted peanuts, crushed.
  8. 2 tbsp coriander, chopped.
  9. 1/4 cup spring green onions, chopped.
  10. 1/4 cup tofu, chopped.
  11. to taste Salt.
  12. For the pad Thai sauce-.
  13. 1/4 cup veg stock.
  14. 3 tbsp soy sauce.
  15. 3 tbsp brown sugar.
  16. 1 tsp tamarind paste.
  17. 1 tbsp red chilli sauce.
  18. 2 tbsp Sriracha sauce.
  19. to taste Salt.

Vegetarian Pad Thai instructions :

  1. Soak the noodles in the warm water for 5-7 minutes until they are soft..
  2. Drain the water and keep aside..
  3. In a pan,mix all the pad Thai sauce ingredients to make the sauce..
  4. Bring the mixture to a boil and simmer for 2-3 minutes on the medium heat..
  5. Heat oil in a separate pan..
  6. Add garlic and red chilli and fry for a minute..
  7. Add onions, spring onions,red yellow bell peppers,tofu, salt, peanuts and saute for a minute..
  8. Add the cooked noodles and the sauce in the pan and toss well..
  9. Garnish with roasted peanuts and spring onions greens and serve hot.
