  8. 1 head chicory, cut in half lengthways.
  9. 1 garlic clove, peeled and chopped.
  10. Juice of 1/2 lemon.
  11. 1/2 tsp olive oil.
  12. For the feta/ cucumber salad.
  13. 1 7cm-long chunk of cucumber, cut into batons.
  14. 1 clove garlic, peeled and crushed.
  15. Juice of 1/2 lemon.
  16. 1 tsp sumac.
  17. 1/2 tbsp extra virgin olive oil.
  18. 1 chunk of feta.
  19. some fresh mint leaves, roughly chopped.
  20. Everything else.
