  4. 4 garlics.
  5. 2 cm ginger.
  6. 2 cm galangal.
  7. 2 cm turmeric (1 tsp turmeric powder).
  8. 2 tsp coriander seed.
  9. 5 red chillies.
  10. 1 tsp palm sugar.
  11. 1/2 tsp pepper.

  13. 4 kaffir lime leaves (tear).
  14. 2 lemongrass (white part only).
  15. 1 tbsp tamarind (remove seed).
  16. 1 cup coconut milk (250 ml).
  17. 1 cup water.
  18. Cooking oil.

Chicken Rendang step by step :

  1. Use food processor or blender to blend all the spice paste ingredients into a fine paste..
  2. Heat oil and fry the spice paste until fragrant..
  3. Add coconut milk and water. Mix well..
  4. Add kaffir lime leaves, lemongrass and tamarind..
  5. Add chicken, adjust the heat down (simmer), keep stirring and cook the chicken until it is tender (min. 30 minutes). Ready to serve..
